I’ve mentioned a few times on here how much I love baking. After not having baked anything for a little while, I decided to make these blueberry muffins and I just couldn’t not share the recipe; they taste delicious! These muffins are super easy to make, packed with fresh, juicy blueberries and make the perfect treat for any time of the day.


Blueberry Muffins

Serves: 12
 
Ingredients
  • 220g fresh blueberries
  • 250g plain flour
  • 250g caster sugar
  • 100g butter
  • 2 large eggs
  • 130ml milk
  • 1½ teaspoons baking powder
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 180°C. Line a muffin tray with paper muffin cases.
  2. In a mixing bowl, cream the butter and sugar together until fluffy. Add in the eggs and beat well.
  3. Next, add in the milk and the vanilla extract.
  4. Sieve the flour and baking powder together and then add it to the mixture. Mix well until you are left with a thick batter.
  5. Gently stir in the fresh blueberries.
  6. Spoon the mixture into the muffin cases.
  7. Bake at 180°C for 25-30 minutes.
  8. Leave the muffins to cool for around ten minutes and then enjoy!

    These look so yummy! I find with blueberry muffins that there are never enough blueberries put into them, but these look chalk full of them!
