I’ve mentioned a few times on here how much I love baking. After not having baked anything for a little while, I decided to make these blueberry muffins and I just couldn’t not share the recipe; they taste delicious! These muffins are super easy to make, packed with fresh, juicy blueberries and make the perfect treat for any time of the day.
Blueberry Muffins

Serves: 12
Ingredients
- 220g fresh blueberries
- 250g plain flour
- 250g caster sugar
- 100g butter
- 2 large eggs
- 130ml milk
- 1½ teaspoons baking powder
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 180°C. Line a muffin tray with paper muffin cases.
- In a mixing bowl, cream the butter and sugar together until fluffy. Add in the eggs and beat well.
- Next, add in the milk and the vanilla extract.
- Sieve the flour and baking powder together and then add it to the mixture. Mix well until you are left with a thick batter.
- Gently stir in the fresh blueberries.
- Spoon the mixture into the muffin cases.
- Bake at 180°C for 25-30 minutes.
- Leave the muffins to cool for around ten minutes and then enjoy!

These look so yummy! I find with blueberry muffins that there are never enough blueberries put into them, but these look chalk full of them!
