If you’re active on Pinterest, then I’m sure you’ve noticed how popular one pot pasta dishes are at the moment. As I’ve been wanting to try one for a very long time, I decided to give it a go. My recipe is inspired by Martha Stewart’s “Original One-Pot Pasta” from her recipe book entitled “One Pot: 120+ Easy Meals from Your Skillet, Slow Cooker, Stockpot, and More.” However, I’ve changed and removed a few ingredients here and there.

What I love the most about this recipe is how quick and easy it is to make. As the name suggests, you literally throw everything in one pot – how amazing is that? It’s perfect for when you’ve had a busy day and the last thing you want to do is slave over the oven for an hour or two. This meal is ready in twenty minutes, the ingredients are minimal and as it’s made in one pot, there’s less washing up to do (yay!).

Just because it’s so simple to make doesn’t mean you have to compromise with the taste. This dish is full of flavour and I promise it will be a big hit with all of your family and friends!
One Pot Pasta - Tomato & Basil

Ingredients
  • 12 ounces penne pasta (or spaghetti)
  • 12 ounces cherry tomatoes (halved)
  • 1 onion (thinly sliced)
  • 4 garlic cloves (peeled and thinly sliced)
  • 3-4 fresh basil leaves
  • 2 tablespoons olive oil
  • ¼ teaspoon black pepper
  • 2 teaspoons salt
  • 4½ cups water
  • parmesan cheese for topping the pasta (optional)
Instructions
  1. In a large pot, combine the pasta, tomatoes, onion, garlic, basil, olive oil, salt and pepper. Then, pour the water on top.
  2. Bring to a boil over a high heat.
  3. Cook for 10-12 minutes, stirring constantly with tongs to make sure the pasta doesn't stick to the bottom of the pot.
  4. Serve immediately. You can garnish it with parmesan cheese if you like.
  5. Enjoy!
