As I’ve been getting my bake on lately, I thought I’d share a recipe with you! Today, I’m going to be showing you how to make simple peanut butter cookies. These cookies are delicious and always a crowd pleaser. I’m in love with their texture – they’re so soft and buttery!
This recipe is super easy and you probably already have all of the ingredients in your cupboards. So if you feel like making fuss-free, classic peanut butter cookies, then this recipe is definitely for you! It’s really quick to make – it shouldn’t take you longer than half an hour to prepare and bake, making it a great treat to rustle up whenever you feel like it.
The recipe has been adapted from Paul Rankin’s version of peanut butter cookies.
- 8 tbsp plain flour
- 2 tbsp caster sugar
- 2 tbsp peanut butter
- 1 free-range egg yolk
- 50g/1¾oz butter, softened
- a splash of milk
- icing sugar, for dusting (optional)
- Preheat the oven to 180C/350F/Gas 4.
- Place the flour, sugar, peanut butter, egg yolk, milk and butter into a large bowl and mix together until combined to a smooth dough.
- Break off evenly sized pieces of the dough and roll into balls.
- Place the dough balls onto a baking sheet and gently press each ball with the back of a fork to flatten slightly.
- Place in the oven and bake for ten-fifteen minutes, or until just turning golden-brown.
- Allow to cool for ten minutes.
- To serve, place on a serving plate and dust with icing sugar.
